
Red velvet is one of my favorite flavors. Granted I know that it is chocolate cake with red food coloring but I love it anyway. Two brick red disks of chocolate cake are sandwiched together with marshmallow fluff, who could resist that? These whoppie pies are fun treats to bake with your kids or friends. Mini red velvet whoopie pies are something everyone will enjoy.
Ingredients:
2 cups flour
2 tablespoons unsweetened organic cocoa powder
½ teaspoon baking soda
½ teaspoon salt
½ cup butter, softened
1 cup packed brown sugar
1 egg
1 teaspoon vanilla
½ cup buttermilk
5 drops red food coloring
7 ounces marshmallow fluff
8 ounces cream cheese at room temperature
¼ cup butter, softened
