
Just because it's Meatless Monday doesn't mean you can't enjoy a burger. These black bean burgers are the perfect meat substitute. Mashed black beans are mixed with rich spices like chili powder and cumin, formed into patties, and then fried on the stovetop. I would serve these burgers with queso fresco, slices of avocado, lettuce and tomato. These black bean burgers are so satisfying that you won't even miss the meat.
Ingredients:
1 can (15 oz) black beans
½ cup bread crumbs or crushed crackers
¼ cup salsa
¼ teaspoon salt
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon chili powder
4 buns
