Shrimp and Grits is a delicious Southern meal. Creamy grits are topped with sauteed shrimp that are flavored with bacon, white wine, and garlic. This recipe adds some spice to the grits but feel free to omit or cut back on the cayenne pepper and Tabasco. The shrimp is sauteed in bacon grease to give it some extra flavor. If you are wary of using the grease, saute in canola oil or other neutral flavored oil. This dish should be part of your culinary repertoire. Ingredients:
1 cup Grits
4 tablespoons Butter
3/4 cup Sharp white cheddar cheese
1/2 cup Parmesan cheese
1 teaspoon Cayenne pepper
1 1/2 tablespoons Paprika
1 teaspoon Tabasco
3 tablespoons Olive oil
1 tablespoon Reserved bacon grease
1 1/2 pounds Shrimp - cleaned, peeled
3 cups Button mushrooms - sliced
3 tablespoons White wine
2 tablespoons Lemon juice
