For anyone who enjoys playing with their food, this is the most magical time of year. We harvest and put up anything from the garden or farmers market, while those that don't understand the thrill of a full pantry just shake their heads.
Luckily, I am not the only one who enjoys a good canning session. Daniel Gasteiger, Author of Yes, You Can! The Modern Step by Step Guide to Preserving Food, has written a wonderful book on the subject. It is a must have for anyone who wants to fill their pantry with fresh foods.

I added "Great Grandma's Pineapple Upside-Down Cake". It is from the cookbook she used to use. It is old, yellowed, has no cover & talks about "Ice Boxes", how to butcher a half a cow. I used to make this cake for bake sales when I was in JR High & High School over 30 years ago. Yes we had kitchen's indoors back then... LOL I hope you enjoy it!!

I added a recipe for Dark Chocolate Fudge Cupcakes, but these are cupcakes I make on the grill. It's too hot to heat up the oven when the outside temp is in the 100's. I'm getting pretty good at cooking on a grill and over a campfire...no more hotdogs and beans for us. I like to take my gourmet cooking with me. Enjoy!

Pepper Hash
12 Green Peppers
12 Red Peppers
12 Onions
Grind, cover with boiling water and let stand 5 mins. Drain.
Add 1 pint vinegar and 2 pints water. Let come to a boil. Remove and let stand 10 mins. Drain.
Add 1 pint vinegar, 3 cups sugar, 3 T mustard seed, 3 T. canning salt. Boil 2 mins and can.
This is from my mom and gramma and I can always remember my mom making this every summer. It was very colorful in the jars and awesome on burgers and chicken during the winter months.
