Gnocchi are Italian potato dumplings that feel like tender pillows in your mouth. In the summertime, I especially love to serve these with a fresh tomato sauce. You can make homemade gnocchi or buy the packaged variety. Either way, this dish will be delicious. If you are looking for an easy tomato sauce, check out my previous blog post for Marcella Hazan's 3 ingredient tomato sauce.
Ingredients:
2 tablespoons Olive oil
300 grams Vittoria cherry tomatoes, cut into halves (10z)
Salt and freshly ground black pepper
1 lrg Tub fresh basil, leaves torn
Freshly grated parmesan cheese, (optional)
