Meatless Monday: Easy Roasted Summer Veggies

Roasting vegetables is so incredibly easy, packed with flavor and super allergy friendly! Naturally gluten free, dairy free (GFCF), eggless and vegan, what could be better for a dinner party or cookout?  By releasing the natural sweetness of each vegetable, while adding a little bit of crunch and incredible tenderness! We all are probably familiar with roasting vegetables like potatoes, peppers or squash - but what about broccoli, brussels sprouts and...carrots? Here are a few of my favorite roasted vegetable recipes featuring fresh summer produce!
