I am cutting back the herbs for the final time this year, and that means a boatload of lemon balm. If you get a chance to ever grow some, the taste is fantastic. Making lemon balm soda is delicious and much better than drinking copious amounts of sugared pop from a can. Try it with lime slices and enjoy!
Lemon Balm Soda
1 cup fresh lemon balm leaves
2 Tbsp honey
2 Quarts boiled water
1 Quart carbonated water, or natural ginger ale
Steep lemon balm in boiled water for 20 minutes
Strain
Add honey
Cool to room temperature
Before serving, add carbonated water and ice.
