
These zucchini fritters are a great way to make use of this prolific summer vegetable. To grate the zucchini, you can use a simple box grater or if you have one, a food processor. The most important step is to drain the shreds of zucchini. If there is too much moisture, the fritters will not fry properly and you will end up with soggy fritters instead of delightful crunchy ones. Serve these delicious zucchini fritters as a side dish with a dollop of garlic yogurt.
Ingredients:
3 medium Zucchinis
1 finely diced medium onion
2 Eggs
1/2 Cup Breadcrumbs
3 Tablespoons chopped parsley
1/4 Cup Pecorino Romano
Salt and Pepper to taste
oil for frying
Directions:
Grate the zucchini using a box grater or food processor and drain the liquid. Add in beaten eggs, parsley, salt, pepper, pecorino, breadcrumbs and onion. Stir until well combined. Form mixture into patties, about a couple of tablespoons. In a frying pan add a small amount of oil and start frying the fritters, a few at a time. Fry each side until golden brown.
