Beets often get a bad rap because they are messy. Granted they can stain your clothes but with the right equipment (an apron and gloves), they are worth the risk. Beets have a sweet and earthy flavor which pairs nicely with anything tart. If you are against eating them, I urge you to try one of these delicious beet salads. I bet they will change your mind.
Roasted Beets with Orange Wedges
The sweetness of the beets pairs perfectly with the acidity of the orange wedges and red wine vinegar.

Serve these marinated beets over mixed greens for a simple salad.

If you are not a fan of blue cheese, substitute with feta cheese.
