Quick and Easy Chicken and Mushrooms

Chicken and Mushrooms is a favorite around here. We raise our own birds, so eating chicken doesn't mean a platter of chicken breasts. It is the whole chicken, cooked in simple ways. This is a  basic chicken and mushroom dish, that takes one pan. It tastes rich and creamy, making it perfect for Sunday dinner. Enjoy!

Chicken and Mushrooms

4 cups fresh sliced mushrooms
1 whole chicken, cut into pieces (3 - 5 lbs)
2 tsp salt
3 1/2 tsp yellow mustard
1/2 cup flour
6 Tbsp oil
1 1/2 cup water
1 cup sour cream or plain yogurt
2 tsp flour
Paprika, pepper to taste

Sprinkle chicken parts well with 1 tsp of the salt

Spread spread 2 1/2 tsp mustard over chicken parts evenly.

Coat pieces with flour.

Heat 1/2 of the oil and brown chicken on each side. Use remainder oil to continue to brown, until all pieces are used.

Remove browned chicken and set aside.

Wipe skillet of excess oil and return to heat.

Add mushrooms and saute until they are golden brown.

In separate bowl, combine water and remainder of the mustard.

Pour over mushrooms and add chicken pieces.

Bring to a boil, reduce heat and simmer until chicken is finished.

Finally, combine sour cream (or yogurt) and flour. Add to pan and heat for the last 5 minutes.
