Vegan baking is always a challenge - with two "essential" ingredients for most batters on the no-no list (dairy + eggs), finding delicious and healthy substitutes is a must! While there are all kinds of non-dairy alternatives these days, finding an egg replacer can be quite the challenge. First of all, you have to consider what the egg is actually doing in the recipe -- is it just a binder? Is it a fluffing agent? Does it form the custard? Based on its essential role(s), you can select an appropriate egg replacer. One of my favorite choices lately has been Chia seeds -- packed with protein, fiber and other essential vitamins and minerals, they can be used just like flax seeds for added nutritional value or thickened into a jelly-like consistency to act as a super healthy egg substitute!
