MMM, these crispy yet soft polenta moons will satisfy even the strongest gluten cravings. Eat them as a snack, or serve them with greens and your favorite protein for a healthy dinner.
1 package (16 oz.) pre-cooked polenta**
dashes ground cayenne pepper
2 tablespoons or more shredded Asiago cheese (raw goat or sheep is ideal)
3 tablespoons olive oil
**Always buy organic corn products, since most of the corn is genetically modified.
