Chicken thighs are a hero of Thrifty Thursdays. They are much cheaper than the breast, and they tend to stay more moist and juicy. Kale is another hearty, yet budget-friendly seasonal ingredient. Together this duo makes a delicious one pot baked dish.
Kale n Chicken Bake
2 cups Brown Rice or Quinoa
6 Chicken thighs trimmed and skin removed (or buy skinless)
4 cups water or stock
4 Garlic Cloves, chopped
1 small onion finely chopped
Salt and Pepper to taste
2 pats of butter
1 bunch Kale or spinach
Juice of 1/2 lemon or more to taste
