
What most chefs see as trash, artist Elpida Hadzi-Vasileva sees as the medium for her fish skin sculptures. She takes scallop skirts, quail bones, salmon skin and other unusual refuse and treats them with chemicals to create otherworldly masterpieces.
The image above, which was captured by Dave Stock, shows one of the pieces Hazdi-Vasileva created for the Pied a Terre restaurant in London, where she is an artist in residence. The artist says of her work, "I'm interested in the transformation of something that is disgusting when you talk about it, but when you have finished working on it, becomes a thing of beauty."
