This quick and healthy Mediterranean bean dish makes for a super simple dinner.
Serve it with your favorite greens and quinoa for a complete and nourishing meal.
Fava Beans
2 tablespoons olive oil
4 garlic cloves. minced
2 cups fresh tomatoes, diced
15 oz can chickpeas (drained and rinsed)
15 oz can fava beans (drained and rinsed)
6 ounces black olives (drained and rinsed)
1 tablespoon lemon juice
salt/pepper to taste
1 jalapeno diced and seeded (optional)
