We use mayonnaise all the time in our cooking, whether we are spreading it on a sandwich, using it as a base for potato salad or mixing it with some sriracha for a dipping sauce. Store bought is good in a pinch but if you have time to make your own, it is really worth the effort. The texture is silky and it tastes so much better. The basic formula for mayonnaise is a mixture of egg yolks and oil with additional seasoning like salt, lemon juice, and mustard. The key is to add the oil slowly to the egg yolks so that it becomes fully incorporated. You can make mayo with a bowl and a whisk or in a food processor. This how-to video shows you the basics.
