These pumpkin cheesecake brownies are a quick and easy Halloween-inspired treat. Making your own cheesecake swirl brings boxed brownies to a whole new level of delicious. The addition of pumpkin makes these brownies festive and adds another layer of flavor. Bake these wonderful pumpkin cheesecake brownies before Halloween...you won't regret it!
Ingredients:
1 (8 ounce) low fat cream cheese
1/4 cup sugar
1 egg yolk
1 cup pumpkin
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 family size box of brownie mix
Directions:
Preheat your oven to 350 degrees. Prepare a 13x9 inch pan with foil, sprayed with cooking spray.
In a bowl mix the brownies according to package directions. Pour this batter into the prepared pan, spreading it evenly with a spatula.
In another bowl mix the cream cheese and sugar together. Add the egg yolk, and canned pumpkin. Add the spices to the batter, and mix until it all comes together evenly. Take your cream cheese mix and drop large tablespoon fulls on top of the batter. With a knife, swirl through the batter to "marbleize" it. Bake for 45 minutes.
