
Store bought olives can be expensive, and it's actually quite easy to cure your own.
The Nourished Kitchen offers this simple eight step method of curing olives.
To Prepare the Olives
2 quarts (about 2 to 2 1/4 pounds) fresh green-ripe olives
filtered water, for curing
To Prepare the Brine
1 quart filtered water
1/4 cup unrefined sea salt
two lemons, quartered (try it with preserved lemons)
sweet bay, chili peppers, peppercorns, garlic or other herbs, spices and flavorings as it suits you
Equipment
rolling pin or wooden mallet
mixing bowl
colander or fine-mesh sieve
two quart-sized mason jars with lids
