Looks may be deceiving but this photo is of a slice of sweet potato pie- not pumpkin pie. Sweet potato pie is a southern tradition that is made by mashing the potatoes with eggs, butter, nutmeg and in this recipe, sweetened condensed milk. I love to make this pie and cover it with marshmallow fluff to give that extra hint of sweetness. This year, substitute the usual sweet potato casserole with this super sweet potato pie.
Ingredients:
2 pounds sweet potato, peeled and sliced (or use 2 16 oz cans, drained)
3 eggs
1 cup sugar
1/2 cup sweetened condensed milk
1/2 cup evaporated milk
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 package (12 oz) frozen deep dish piecrusts, thawed
