Super Sweet Potato Pie

November 22, 2011

Looks may be deceiving but this photo is of a slice of sweet potato pie- not pumpkin pie.  Sweet potato pie is a southern tradition that is made by mashing the potatoes with eggs, butter, nutmeg and in this recipe, sweetened condensed milk.   I love to make this pie and cover it with marshmallow fluff to give that extra hint of sweetness.  This year, substitute the usual sweet potato casserole with this super sweet potato pie.

Sweet Potato Pie

If you use canned, don't cook)

Beat sweet potato and butter at medium speed until smooth. add eggs and next 6 ingredients, beating well. Pour mixture evenly into each piecrust.

Bake at 350 degrees on lower oven rack for 45-50 minutes, or until set.
