In Japan, Subway Sandwich has taken their emphasis on fresh to a whole, new level. The shop has what they refer to as a vegetable factory, a glass enclosed area in the center of the store. This area contains hydroponically grown lettuce, that uses no agrochemicals . This lettuce is an optional ingredient, costing about two times as much as the standard lettuce.
The living lettuce in the store can only provide about 5 percent of the need, but Subway Japan is proving that their food is absolutely fresh, safe, and can be provided in a sustainable way.
