
Our first instinct with turkey day leftovers is to make a sandwich. Instead of piling mashed potatoes, gravy, cranberry sauce, and turkey in between two pieces of white bread try making this turkey Reuben. Thin slices of turkey are paired with piquant sauerkraut, thousand island dressing, and mild Swiss cheese. If you ask me, this is a scrumptious way to devour leftovers.
Ingredients:
1/3 cup thousand island dressing
2 teaspoons cider vinegar 4
slices rye bread 6 ounces sliced cooked turkey
3/4 cup drained sauerkraut
8 slices Swiss cheese
3 tablespoon unsalted butter
Directions:
Whisk together thousand island, cider vinegar, and 1/8 teaspoon each of salt and pepper. Spread on rye bread and make sandwiches with turkey, sauerkraut, and cheese.
Melt butter in a 12-inch nonstick skillet over medium heat, then cook sandwiches, turning once, until bread is golden and cheese is melted, about 6 minutes total.
