Gluten Free Sweet 'n Spicy Honey Roasted Potatoes

When it comes to savory cooking, honey always seems to fall into two categories: meat glaze and salad dressing -- like honey glazed pork chops or honey-mustard dressing, you know the drill. Instead of making a delicious sweet-savory sauce for these addictively delicious potatoes, the honey makes for a simple sauce that takes center stage in this elegant twist on classic homefries!
 
Honey Paprika Pan Roasted Potatoes // Gluten Free, Milk / Dairy Free
Serves 4
 
10 medium red potatoes (5 lbs)
1 bay leaf
1/2 tsp whole peppercorns
2 sprigs fresh thyme
1 1/2 Tbsp honey
1/2 tsp smoked paprika
1 Tbsp extra virgin olive oil
1/2 tsp fresh rosemary, minced
 
1 tsp coarse kosher salt
 
Rinse and scrub the potatoes until clean. Place in a large saucepan and fill with enough water just to cover. Add bay leaf, thyme, salt and pepper. Bring to a boil and simmer until potatoes are tender when tested with a fork.
 
Remove the saucepan from the stove, drain and plunge the potatoes into an ice water bath for 1 minute. Drain and, using your fingers, peel away the potato skin. Cut potatoes into 1-inch chunks.
 
Heat the oil in a large sauté pan until it begins to shimmer. Add potatoes and pan fry until golden brown on all sides, stirring occasionally. Add honey, paprika and cook an additional 2 or so minutes, until the honey has melted. Pour the potatoes into a serving bowl and sprinkle with rosemary. Serve warm.
