Must-Bake Gingerbread Muffins

These moist gingerbread muffins from Confections of a Foodie Bride are the perfect holiday breakfast to get you going in the morning.  With a tender crumb and enough spices to wake-up your taste buds, these gingerbread muffins are easily a crowd pleaser.  If you prepare the ingredients the night before, you can easily whip up these muffins in the morning before you go to work or send the kids to school.  Gingerbread muffins will instantly become a family favorite.

Gingerbread Muffins

Ingredients:

2 3/4 cups all purpose flour
2 1/2 tsp baking soda
1 Tbsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground allspice
1/2 tsp nutmeg
1/4 tsp fresh ground black pepper
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temp
1/2 cup packed dark brown sugar
2 large eggs
3/4 cup molasses
3/4 cup fat-free greek yogurt
Coarse sugar for garnish (optional)
