Sunday Baking: Cranberry Orange Banana Bread

This cranberry orange banana bread is a delicious low-fat quick bread that will jumpstart your post-holiday weight loss program.  Applesauce is substituted for oil but keeps the bread moist and lends another layer of flavor. If you cannot find fresh cranberries, you dried (look for those without any added sugar). Each slice of this wonderful bread is only 80 calories!  In this case, you can have your bread and eat it too.

Cranberry Orange Banana Bread

Ingredients:

1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup sugar
1/2 tsp. vanilla extract
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup egg substitute or two eggs
1/2 cup unsweetened applesauce
3 mashed very ripe bananas (approximately 1 cup)
1 tsp pure orange extract
1 cup fresh or frozen cranberries, cut in half
1 Tbsp. Orange Zest
 
Directions:
 
Mix together dry ingredients until well combined.
 
In a separate bowl, mix eggs, applesauce, vanilla extract, orange extract, orange zest and mashed bananas.
 
Stir banana mixture into flour mixture, and then add cranberries.
 
Stir carefully
 
Bake in a greased loaf pan or (3 mini pans for 30 minutes) for approximately one hour at 350°F.
 
Bread is done when a toothpick comes out clean.
 
Makes 18 slices, approx 6 slices per mini loaf
