Homemade Pink Ravioli is a Seductive Italian Dish for Valentine's Day

February 6, 2012

Homemade pink ravioli from The Italian Dish is a seductive Italian dish for Valentine's day.  There is no food coloring used in this recipe just good old fashioned beet puree.  The sweet earthiness of the beets lends itself to pretty and tasty pasta.  Fresh pasta requires a lot of rolling and this can be achieved by using a rolling pin, a manual pasta roller, or a pasta attachment for a stand mixer.  The ravioli is filled with a mixture of goat cheese, hazelnuts, and chives.  Your significant other will appreciate the gesture of homemade pink ravioli more than you will know.

Ingredients:

for the filling:

11 ounces plain goat cheese
1/2 cup freshly grated Parmigiano Reggiano cheese
1 tablespoon chopped chives
1 egg
salt and pepper to taste

3 small beets, scrubbed
olive oil
salt and pepper
3 large eggs, room temperature
1-1/2 cups all purpose flour (plus more for dusting)
1/2 cup semolina flour
