
Constellation cheesecake from Diamonds for Dessert show you the stars in your dessert. Susan, the blogger and baker, was inspired to bake these cheesecakes by her love for outer space. Adorable mini cheesecakes are glazed with blueberry preserves (acting as the night sky) and topped with mini white chocolate stars to resemble the zodiac constellations. If you are a a lover of stars or just like delicious desserts, bake these individual constellation cheesecakes.
Ingredients:
Graham Cracker Crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1 stick butter, melted
Cheesecake Filling:
2 packages (16 oz) cream cheese, room temperature
1/2 cup sugar
2 eggs
1 tsp vanilla extract
Blueberry Glaze:
1 cup strained blueberry preserves
2 tbsp hot water
1/2 tbsp gelatin
a few drops blue food coloring
White Chocolate Stars:
white chocolate (or white candy melts)
