Bird's Nest Cupcakes are an Early Springtime Dessert

Bird's nest cupcakes from Cooking Classy are an early springtime dessert.  Homemade vanilla cupcakes are topped with rich chocolate buttercream.  The bird's nest is made from toasted coconut and mini blue Cadbury eggs are decorated to resemble baby birds.  If you are pressed for time, you can use boxed cake mix but the flavor of homemade baked goods will always be superior.  Bird's nest cupcakes would be the perfect sweet treay to serve during Easter.

Ingredients:

Vanilla Cupcakes:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup salted butter, softened and diced into pieces
1 large egg, at room temperature
2 large egg yolks, at room temperature
1 1/2 tsp vanilla extract
1/2 cup sour cream

Chocolate Buttercream:
2 cups powdered sugar
1/3 cup salted butter, softened
2 Tbsp heavy cream
1/2 tsp vanilla extract
1 Tbsp cocoa powder
Yellow and red food coloring gel

1 cup sweetened, flaked coconut
36 blue chocolate Cadbury Mini Eggs
1 Tbsp Semi-Sweet Chocolate chips
