This white bean and tomato salad from Alaska from Scratch is the perfect picnic food. Tomatoes and white beans are tossed with fresh parsley and a homemade lemon Parmesan dressing. You can add other vegetables to this recipe like red bell pepper and cucumbers which would be delicious. This salad can be made a day or two in advance, it is one of those dishes that gets better the longer it sits. Serve this white bean and tomato salad in individual canning jars or in a large bowl- no matter how it's packed, it will be thoroughly enjoyed.
1 (15oz) can Cannellini Beans, drained and rinsed
1 pint grape tomatoes, halved
1/3 c flat-leaf parsley, chopped
For the Dressing:
¼ c extra virgin olive oil
2 cloves garlic, chopped
½ t rosemary
¼ c grated Parmesan cheese
½ t salt
¼ t pepper
1t lemon zest
¼ c lemon juice
