Easy Cherry Cobbler

With summer comes the promise of stone fruit.  To celebrate the coming bounty and National Cherry Pie day, Foodista is sharing a recipe for a super easy cherry cobbler.  This dessert requires less then ten ingredients and can be baked any day of the week.  If cherries have not arrived to your farmer's market yet, you can substitute with any berry or other stone fruit.  The key to the perfect cherry cobbler is serving it with a scoop of vanilla ice cream.

Cherry Cobbler

Ingredients:

1 cup flour
1/2 cup sugar
3 tablespoons butter, melted
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 cups sour red cherries (save juice)
1 cup cherry juice (add water to make 1 cup)
1 cup sugar
 
Directions:
 
Mix together first 6 ingredients and pour into 9"x9" baking dish.
 
Mix cherries, juice and sugar together and pour on top of batter spreading evenly.
 
Bake at 350 degrees for 1 hour.
