Grilling season has officially arrived so it's time to dust off the barbecue and break out the tongs. Brown rice and mushroom veggie burgers from Better with Butter are a tasty vegetarian main dish. These patties are anything but bland, brown rice is mixed with umami packed crimini mushrooms, garlic, onion, and oatmeal for texture. They are topped with goat cheese and green onions (don't be afraid to skip the ketchup for this recipe) and served in a whole wheat bun. Your vegetarian as well as your meat eating friends will rave about this totally delicious veggie burger.
2 tablespoons olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
8 ounces crimini mushrooms, finely chopped
1 cup cooked brown rice (slightly overcooked and sticky)
1/2 cup old-fashioned oatmeal
1 cup grated parmesan
1/2 tsp garlic powder
2 tablespoons thyme salt and pepper to taste
goat cheese for topping
green onions for topping
whole wheat buns
4 tbsp fig jam or preserves
1/3 cup mayonnaise
