It is spooned into 1.5 inch pie dough rounds, cut using a cookie cutter. It is important to cut a vent at the top of the dough before baking the hand pie to allow the steam to escape. 5-6 stalks rhubarb, washed and thinly sliced
3 1/2 cups strawberries, finely diced
3/4 cups granulated sugar
1/2 cup brown sugar
1/4 cup cornstarch 2
tablespoons all-purpose flour
1/2 teaspoon lemon zest
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon coriander
1 egg, lightly beaten
sugar, for sprinkling
