Simply Summer: Rum-Glazed Pineapple

August 9, 2012

Grilled fruit is an underrated dessert.  When the sweet slices of summer fruit hit the heat and char, something magical happens.  The flavors become more pronounced and it takes on a whole new flavor profile.  Rum-glazed pineapple is one of those recipes.  It can be served on it's own as a light dessert or atop a piece of buttery pound cake with whipped cream for something a little more rich and decadent.

Rum-Glazed Pineapple

Ingredients:

1 pineapple, peeled, cored and sliced into ½ inch rings
1/2 cup dark rum
1/4 cup orange juice
2 tablespoons lime juice
1 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/4 teaspoon ground cloves

Directions:

Preheat and season a grill over medium flame.

In a small saucepan over a low flame, combine rum, brown sugar, citrus juices and spices. Heat, stirring constantly, until the sugar dissolves. Remove from heat and allow mixture to cool.

Place pineapple rings on the grill and baste with rum mixture. Grill for 8-10 minutes, flip the pineapple rings and baste again with rum mixture, cooking for an additional 6-8 minutes.

Remove pineapple rings from grill and serve with remaining glaze.
