These roasted radishes from Beloved Green are simple and delicious. The lonesome radish often gets forgotten when we are considering what vegetable to eat. They are absolutely wonderful raw in a salad or buried in a taco but when radishes are cooked, they completely transform. Their piquant flavor is tamed and they become mellow and slightly sweet. Give roasted radishes a try and you just might be pleasantly surprised.
