Tortellini in Bordo is a quick and easy Italian supper for any night of the week. You can use any flavor tortellini for this dish, whether it's plain cheese, pancetta, or spinach and ricotta. The tortellini is cooked in a simple sauce of chicken stock and Parmesan cheese. Since there are so few ingredients, you'll want to use the best available. Serve tortellini in bordo with a refreshing green salad.
2 cups chicken stock (if possible, homemade is best)
3/4 cup frozen tortellini
1 teaspoon Parmigiano-Reggiano, freshly grated
1 teaspoon lemon zest
1 teaspoon fresh lemon juice, a wedge worth
Salt and pepper
Heat the stock to a boil and cook the tortellini. Ladle into bowls, squeeze in lemon and stir. Grate cheese and zest on top, and add some freshly ground salt and pepper. Serve immediately.
