Put that bottle of Italian dressing back in the fridge and try your hand at making one of these sensational homemade vinaigrette recipes.  Making vinaigrette is so easy, you'll wonder why you haven't started making your own long ago.  Depending on your taste, a classic vinaigrette is three parts oil to one part vinegar.  If you prefer a dressing that is more acidic, you can do two parts oil to one part vinegar.  Experiment with different oils and vinegars to find a combination that you like.  You can also add garlic, herbs, spices, and even fruit preserves to make the vinaigrette more dynamic.   The three recipes below are a good place to start.
