Arugula Salad with Walnuts, Apples and Radishes

January 7, 2013

Arugula salad with walnuts, apples and radishes is a refreshing winter dish.  Spicy arugula leaves are tossed with tart apples, piquant radishes, and buttery walnuts - flavors that compliment each other.  However, the highlight of this salad is the rose vinaigrette.  It adds a floral sweetness that is distinct yet not overwhelming.  Blue cheese would also be delicious in this salad.
