When I was in college, right before I had to present my final speech for Public Speaking class, the delicious smell of Chicken Marsala wafted across the auditorium and changed the mood from nervous to ravenous. There is no way anyone could be worried about making a mistake when they have a plate of fresh Chicken Marsala waiting for them. Well played, girl who went before me, well played.
6 oz.sliced, fresh mushrooms
1 large boneless, skinless chicken breast
2 large cloves garlic, minced
2 tbs butter
1 tbs olive oil (plus additional to saute mushrooms)
Seasoned Breadcrumbs/Coating Mix*
2 cups Marsala wine
1/4 cup heavy cream
Cooked pasta, if desired
