Mother's Day Brunch: Cheesy Hash Brown Casserole

Cheesy hash brown casserole is a must-have dish at your Mother's Day brunch.  Thinly sliced potatoes are baked with sharp cheddar cheese, sour cream and finely chopped onions until golden brown and bubbly.  If you are a topping kind of person, you can cover your casserole in crushed corn flake cereal.  This easy casserole will feed a crowd in addition to pleasing their taste buds.

Hash Brown Casserole

Ingredients:

1/2 pound of frozen hashbrown potatoes
1 cup shredded sharp cheddar cheese
8 ounces sour cream
2 tablespoons butter
1/2 chopped onion
Cooking Spray (such as Pam)
Salt and Pepper
 
Directions:
 
Preheat oven to 350 degrees Fahrenheit
 
Remove hash browns from freezer to thaw for a few minutes
 
Melt butter in microwave in a large mixing bowl
 
Add remaining ingredients (except cooking spray)
 
Mix until combined
 
Add to a greased casserole dish
 
Coat top of dish with cooking spray (to prevent burned edges)
 
Bake for 45 minutes to one hour.
