Smoky Vegan Baked Beans with Caramelized Onions

You don't have to be vegan to fall in love with this baked beans recipe. The smoky flavor in this dish gives it a bacon-like flavor that will satisfy any palate! The richly caramelized onions brings out even more sweetness to the already sweet variety, so no sugar is needed.

Smoky Vegan Baked Beans with Caramelized Onions

2 15-ounce cans kidney beans, drained and rinsed
2 Walla Walla or other sweet onions, sliced
1-2 tablespoons olive oil
Liquid smoke
Kosher salt and pepper to taste

Drain and rinse beans and set aside. Heat olive oil over medium heat in a large sauté pan. Add onions and cook, stirring frequently to prevent from burning; about 30-45 minutes. Once onions are a rich brown color, add beans and continue cooking until beans are heated through. Add about a half teaspoon of liquid smoke (more if you want a bigger smoke flavor), season with salt and pepper and serve.
