Cool down from the summer heat with vegan coconut ice cream. Cate of Girl Cooks World created this recipe using coconut milk instead of cow's milk or cream. It is also surprisingly simple to make, taking 20 minutes to make the ice cream before setting it to cool.
Vegan Coconut Ice Cream
- 2 15 ounce cans full-fat coconut milk, divided
- 3/4 cup sugar
- pinch of salt
- 2 1/2 tbsp cornstarch
- dried, unsweetened shredded coconut, toasted
