Meatless Monday: Lentil and Walnut Salad

This lentil and walnut salad from Delicious Vitality is a meatless meal packed with nutrition.  Tender brown lentils are tossed in a balsamic rosemary vinaigrette and spinach and tomatoes.  This salad gets better the longer it sits so try to make it advance if you can.  Lentil and walnut salad is perfect for picnics or a healthy lunch.

Lentil and Walnut Salad

Ingredients:

1 cup cooked brown lentils, cooled and drained
1/4 cup sliced green onions, green part only
8 kalamatas olives, pitted and roughly chopped
1 teaspoon Dijon mustard
1 clove garlic, crushed
1/2 teaspoon sea salt
