Summer Eating: Fresh Tomato Soup

When summer gives tomatoes, you make fresh tomato soup.  This easy recipe highlights the tomato's flavor at the peak of its season.  If you prefer cream of tomato soup, stir in a half cup of cream when you've finished cooking the soup.  Serve with fresh basil and a grilled cheese.

Fresh Tomato Soup

Ingredients:

1 tablespoon Butter
1 lrg Garlic clove, finely chopped
1 medium Carrot, diced
1 medium Onion, chopped
3 cups Diced ripe tomatoes
3 tablespoons Chopped fresh basil leaves
Salt & Freshly ground pepper
 
Directions:
 
In heavy saucepan, melt butter; stir in garlic, carrot, and onion. Cook over medium-low heat until onion is tender. Add stock; cover and simmer for 20 minutes. Stir in tomatoes and simmer for 10 minutes. Just before serving, stir in basil and salt and pepper to taste.
