Coconut sticky rice with fresh mango is a dessert from My Delicious Blog hails from Southeast Asia. Similar to rice pudding, this sweetened rice dessert is cooked with sugar and coconut milk. Fresh slices of mango are served alongside to cut the richness of the rice.
1 cup of sticky rice
1 3/4 cups of water
1 can of good-quality coconut milk
2 cups of white sugar
A pinch of salt
2 teaspoons of cornstarch dissolved in 2 tablespoons of water
2 ripe mangoes, cut into bite-size pieces
Soak the sticky rice in 1 cup water for 1 hour in a pot.
