Crispy Cauliflower Cakes

While the omnivore may have crab cakes, the vegetarian can indulge with these crispy cauliflower cakes from The Roasted Root.  Cauliflower florets and potato are roasted until tender before being blended with cheese and rolled in breadcrumbs.  These cakes are served with a tangy scallion yogurt sauce that compliments the dish perfectly.  For full recipe instructions, click here.
