Scrumptious Pumpkin Pineapple Muffins

Pumpkin pineapple muffins are a delicious fall breakfast.  The addition of fruit keeps these muffins moist.

Pumpkin Pineapple Muffins


1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
2 tablespoons oil
1/2 cup unsweetened crushed pineapple, drained
Coat muffin tins with cooking spray.
Whisk dry ingredients.
In a separate bowl cream wet ingredients.
Combine wet and dry ingredients until just combined.
Spoon into muffin tins and bake 13 - 15 minutes until lightly browned.
