Creamy and Sweet Japanese Potato Salad

Nowadays, many Japanese restaurants offer their own take on potato salad, tucked away in bento box corners. Japanese potato salad is milder, creamier and generally sweeter than American or German versions. Boiled carrot, sliced cucumber, onion, a little sugar and chopped boiled egg round out this Japanese-style potato salad from Just Hungry.

Japanese Potato Salad

Ingredients:

    3 medium boiling (firm) potatoes, well scrubbed
    1 small carrot
    About 10 cm / 4 inches of a seedless cucumber
    1 small onion
    1 egg
    Salt and pepper
    3/4 to 1 cup of mayonnaise, Japanese or homemade preferred (see notes above)
