Vegan baking sometimes gets labeled as dry, tough or boring, but these blackberry coconut bars from Pies and Plots prove quite the opposite. Oats create a light and chewy texture, along with moist shredded coconut and incredibly juicy blackberries that spread through the bars as they bake. Yum.
½ cup plus 1 tablespoon granulated sugar, divided
1 ½ cups all-purpose flour
1 cup old fashioned oats
1 teaspoon baking powder
¼ cup shredded unsweetened coconut
¾ cup virgin coconut oil, solid
3 ½ - 4 cups blackberries
1 tablespoon fresh lemon juice
