Craving Buster: Oreo and Banana Muffins

December 30, 2013

Banana muffins are so soft, moist and slightly nutty, they sometimes just beg to be combined with chocolate. Many recipes add bittersweet chocolate chips, but this one uses Oreo cookies for a surprising flair. Sliced banana and hunks of Oreo are baked in the tops of these muffins for a gorgeous finish.

Ingredients:

110 grams Of Butter, soften
100 grams (½ Cup) Sugar
110 grams (1 Cup) Flour
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
2 Eggs
2 tablespoons Condensed Milk
2 Medium Bananas, mashed with fork
8 Oreo Cookies
1/2 teaspoon Vanilla Essence
1/4 teaspoon Banana Essence, optional

Sift the flour, baking powder and baking soda together and set aside.

Remove the cream from the cookies. Place the cookies in a ziplock bag and use a rolling pin to crush the cookies into fine crumbs.

Cream butter and sugar with electric beater until light and fluffy (about 3 minutes on medium speed).

Add in egg one at a time and beat until the mixture is well combined, without any trace of egg.

Add mashed banana, vanilla essence and condensed milk into the butter mixture and give it a quick whisk.

Lower the mixer speed, add flour mixture and blend the mixture until smooth.

Stir in the Oreo cookie crumbs. Scoop the mixture into prepared muffin cups to 3/4 full.

Top the muffin batter with some extra banana slices and Oreo cookies. Bake in preheated 180 degree oven for about 20 - 25 minutes, or until a toothpick inserted in the center comes out clean.
