Easy Lunch: Apple Bacon Pita Pizzas

Making pizza on pita bread — what a great easy lunch idea! These pita pizzas are topped with crumbled bacon and apples sautéed with red onion and warm spices. It looks so simple and delicious!

Pita Pizzas with Sautéed Apples and Bacon

Ingredients:

2 pitas
4 slices of bacon, cooked and crumbled
1 granny smith apple, cored and sliced
1/2 red onion, sliced
4 cloves of garlic, minced (divided)
3/4 cup cheddar cheese, shredded
1/4 cup demerara sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
of cloves
1 teaspoon salt
3/4 teaspoon crushed chili pepper flakes
2 tablespoons olive oil
1 tablespoon butter

Preheat oven to 400°

Place the onion and apple in a large bowl. Add sugar, cinnamon, cloves, ginger, chili pepper flakes, salt and 2 cloves of garlic. Toss to coat.

Melt butter and 1 tbsp olive oil in a large skillet over medium high heat. Add apple and onion mixture and sauté until the apples are tender, about five minutes. Remove from heat and set aside.

Brush the pitas with the rest of the olive oil and sprinkle with the remainder of the garlic.

Top pitas with apples and onions and sprinkle with cheese and bacon.

Bake in the oven for five minutes then turn the oven to broil (keeping a close eye on them) for 1-2 minutes. Slice into quarters and serve.
