Sunday Baking: Pear and Candied Ginger Muffins

If you love the bright zing of ginger, you’re going to love these muffins. Strawberry Plum offers up this comforting, cold-weather muffin recipe that uses ground ginger and bits of candied ginger for that familiar zesty flavor. Paired with fresh pear, it’s just the right combination of light and punchy.

Pear & Candied Ginger Muffins

Ingredients:
    Muffins
    3 c. all-purpose flour
    ¾ c. sugar
    1 Tbsp. baking powder
    ½ tsp. baking soda
    ½ tsp. salt
    1 tsp. powdered ginger
    ¼ tsp. freshly grated nutmeg
    1½ c. plain yogurt
    2 eggs
    1 tsp. vanilla extract
    8 Tbsp. (1 stick) unsalted butter, melted and cooled
    2 medium pears, peeled and diced into ½ in. chunks (about 1½ c.)
    ½ c. sliced candied ginger
    
    Glaze
    1 c. powdered sugar
    2 tsp. powdered ginger
    3 Tbsp. lemon juice
